If you've seen any of my Instagram posts lately, I've been sharing some of my simplest and quickest meal ideas that you can throw together in just a couple minutes, or #5MinuteMealPrep as I like to call it!
This has been especially helpful while I'm spending a couple weeks in Costa Rica. I've been cooking breakfast and some lunches at home and keeping them super simple, and then eating out for dinner.
This is what a typical day's meals have been like:
Post workout: Shakeology + collagen (I put one scoop of each in snack sized ziplock bags when I travel so I always know I'll have at least one healthy meal each day)
Breakfast: eggs, avocado, tomatoes, and cheese, I've even tossed in a handful of blueberries from time to time
Lunch: a huge salad loaded up with veggies and chicken
Dinner: mainly fish and veggies (I've been living off ceviche!)
I found an amazing farmer's market in the town of Tamarindo where I've been able to pick up a lot of fresh, local fruits and veggies as well as some kombucha and fresh pressed green juices.
This is helping me feel good and stay on track with my goals without feeling too guilty about the guaro sours or cervezas I'm having, too!
I also haven't stopped my workouts just because I'm traveling. I packed my loops and sliders, and last week I had access to a gym, so I was able to do my 80-Day Obsession workouts from there. This week I have no gym, so I'm doing some of the BOD workouts that don't require weights, like TurboFire and Shift Shop.
Running is one of my favorites when I travel because it's a great way to check out the area. I've also been doing a lot of hiking and walking to check out the beaches, hot springs, and volcanos.
