Thai Spaghetti Squash
If I'm going to follow a recipe, it needs to be SIMPLE. For this one, all you do is cook the squash, let it cool, chop the veggies, and mix everything in a big bowl. Easy!
- Spaghetti Squash
- Cucumber, diced
- Bell pepper, diced
- 1 cup carrots (I buy bags of pre-shredded carrots to save time)
- green onion, diced
- 1/2 cup peanut butter
- juice from 1 lime
- 3 Tbsp soy sauce
- 1 Tbsp sesame oil
- grated ginger
- cilantro
- Cut squash in half and cook face down on baking sheet at 400* for 1 hour (or cook for 6 min with manual release in your Instant Pot)
- Combine 1/2 cup peanut butter, lime juice, sesame oil, soy sauce and grated ginger in a small bowl
- Chop veggies
- Mix everything together and top with cilantro
