Thai Spaghetti Squash

If I'm going to follow a recipe, it needs to be SIMPLE. For this one, all you do is cook the squash, let it cool, chop the veggies, and mix everything in a big bowl. Easy!

  • Spaghetti Squash
  • Cucumber, diced
  • Bell pepper, diced
  • 1 cup carrots (I buy bags of pre-shredded carrots to save time)
  • green onion, diced
  • 1/2 cup peanut butter 
  • juice from 1 lime
  • 3 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • grated ginger
  • cilantro

  1. Cut squash in half and cook face down on baking sheet at 400* for 1 hour (or cook for 6 min with manual release in your Instant Pot)
  2. Combine 1/2 cup peanut butter, lime juice, sesame oil, soy sauce and grated ginger in a small bowl 
  3. Chop veggies
  4. Mix everything together and top with cilantro
