Veggie & egg cups

  • nonstick cooking spray
  • 12 large organic eggs
  • 1 cup chopped mushrooms
  • 1 medium red bell pepper, finely chopped
  • 2 green onions, thinly sliced
  • s&p to taste 

Heat oven to 375*F
Lightly coat a 12 cup muffin tin with spray
Whisk eggs in bowl
Add all other ingredients and mix well
Evenly pour into muffin cups
Bake for 15-20 min. or until a toothpick comes out clean
Variations
  • Add 1/2 blue container of cheese to each serving (shown in picture)
  • Chopped broccoli & shredded carrots
  • Chopped red, green & yellow bell peppers
  • Chopped bell peppers & onions
  • Spinach & chopped mushrooms 

Makes 6 servings (2 cups each serving)
